We love Macaroni & Cheese but it is usually high in carbs, calories and fat. This recipe has been modified to fit a calorie conscious family.
Bring 4 cups of water to a boil
Add 2 cups whole grain pasta
Cook until tender.
Drain
Add to macaroni in the pan:
1/2 cup skim milk
1/2 cup light Velveeta cheese
2 T butter or margarine (light)
salt & pepper to taste.
Cook on low heat until cheese is melted. Serve warm.
Yields 4-1/2 cup servings. Delicious!
