This recipe is one of my favorite salads. I have adapted it to low-fat/calorie recipe.
1 pkg sugar-free orange jell-o
1 small container light cottage cheese
1 small container light cool whip
1 small can mandarin oranges, drained
1/2 c chopped pecans
Mix jell-o with cottage cheese until jell-o is dissolved. Fold in cool whip, mandarin oranges and pecans. Chill before serving. Makes about 4 cups or 8-1/2 c servings.
You can substitute any flavor of jell-o or fruit.
